Wine making: The juices resulting from draining and pressing are cleansed cold before fermentation at low temperature. The wine then is tapped and preserved on fine dregs until the setting out of bottle. Tasting: This white wine was born at the Cellar of Labastide de Lévis in 1957 and is affirmed today like product of regional tradition. The pearl reveals floral flavours and citrus fruits of this dry wine of a large smoothness. Dish and wine agreement: it is ideal with aperitif and marvellously accompanies fish and the seafood. Superb yellow dress straw with the green nuances, brilliant, with pretty and fine so characteristic bubbles. Very fresh nose with the ripe spice and white fruit flavours. Very elegant and fresh mouth, magnificied by the fine beading bubbles which underline its refreshing character and make a truth and delicious wine of it very fresh.  | Chevalier Des Bastides AOC Gaillac dry red wine CHEVALIER DES BASTIDES AOC Gaillac dry red wine 2005 Grape variety: Duras, Syrah and Braucol Soils: Poor gravels and thick clay soils, these deep soils protect the vines from the dryness. They confer colour and plenitude to the wines. Wine making: Traditional: long cuvaison from 12 to 18 days. Tasting: Wrap dark colour ruby. Blackberry nose with a spiced point. Stop of a perfect balance, the structure is full and molten. The end of mouth is long and intense. Been useful confined, this wine is ideal on red meats, legs like on cheeses.
